Raspberry vinegar, olive oil, shallot and honey. Sharp first, fruit second. The honey rounds off the vinegar and stops well short of sweet.

Bitter leaves and goat's curd. Roast beetroot. A pan sauce for duck or pork chops, loosened with a splash straight from the bottle.

Made to order on the Central Coast NSW. 250ml. Shake it before it goes on, and into the fridge once open. Contains honey: not vegan.
