The midnight noodles. Hot oil poured over garlic and spring onion, the sizzle you can hear from the next room, then rayu doing what no jar of sauce can. Craving to bowl in five minutes.

Ingredients
- 200g noodles, ramen or wheat
- 3 dessertspoons Plateit Japanese Peanut Rayu
- 1 tbsp soy or tamari
- 1 tsp black vinegar
- 2 cloves garlic, grated
- 2 spring onions, sliced
- 1 tbsp neutral oil
Method
- Cook noodles, drain, keep a splash of the water.
- Pile grated garlic and half the spring onion on the drained noodles.
- Heat neutral oil until it smokes. Pour over the garlic so it sizzles.
- Add rayu, soy and vinegar. Toss, loosening with noodle water. Rest of the spring onion on top.
Tip: The oil has to be smoking or the garlic sits there raw. Stand back when you pour.
