Damper is flour, butter, milk and a hot camp oven, and it was never meant to be good. It is good anyway, provided you tear it apart the moment it comes out and do not let it sit around going tough. Butter first so it melts in, then the Truffle'd Hot Honey, which turns a survival bread into something you would put in front of people on purpose. Works in a home oven. Better in the coals.

Ingredients
- 450g Self raising flour
- 60g Butter, cold, cubed
- 250ml Milk
- 1 tsp Salt
- Butter, to serve, plenty
- 3 tbsp Plateit Truffle'd Hot Honey Drizzle
Method
- Oven to 200C, or bank your coals and get the camp oven hot with coals on the lid as well as under it.
- Rub the cold butter into the flour and salt with your fingertips until it looks like coarse sand. Do not labour it.
- Pour the milk in and bring it together with a knife. Eight turns on the bench, no more. Overworked damper is a brick.
- Shape into a round, cut a deep cross in the top, and bake 25 to 30 mins until it sounds hollow underneath.
- Tear it open while it is too hot to handle. Butter into the steam, then the Plateit Truffle'd Hot Honey Drizzle straight over the torn face.
Swap it: A handful of grated cheddar and a spoon of Plateit Chilli Crunch worked through the dough makes the savoury version. No honey needed then.
