Rayu Egg and Smashed Cucumber Salad made with Plateit Japanese Peanut Rayu

The side that quietly steals the meal. Cucumbers smashed so they drink up the dressing, jammy eggs, and a peanut rayu dressing sharpened with a bit of vinegar. Cold, crunchy and spicy, done in the time it takes to boil an egg.

15 minutes. Serves 2.

Ingredients

  • 2 cucumbers
  • 4 eggs
  • 2 dessertspoons Plateit Japanese Peanut Rayu
  • 1 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 clove garlic, grated
  • Sesame and spring onion to serve

Method

  1. Boil eggs 6.5 mins, cool, peel and halve.
  2. Smash the cucumbers with the flat of a knife, tear into chunks, salt and drain 10 mins.
  3. Whisk rayu, tamari, vinegar and garlic into a dressing.
  4. Toss cucumbers in the dressing. Plate with eggs, sesame and spring onion.

Tip: Salt the smashed cucumber and let it drain, or the dressing turns watery on the plate.
