The side that quietly steals the meal. Cucumbers smashed so they drink up the dressing, jammy eggs, and a peanut rayu dressing sharpened with a bit of vinegar. Cold, crunchy and spicy, done in the time it takes to boil an egg.

Ingredients
- 2 cucumbers
- 4 eggs
- 2 dessertspoons Plateit Japanese Peanut Rayu
- 1 tbsp tamari
- 1 tbsp rice vinegar
- 1 clove garlic, grated
- Sesame and spring onion to serve
Method
- Boil eggs 6.5 mins, cool, peel and halve.
- Smash the cucumbers with the flat of a knife, tear into chunks, salt and drain 10 mins.
- Whisk rayu, tamari, vinegar and garlic into a dressing.
- Toss cucumbers in the dressing. Plate with eggs, sesame and spring onion.
Tip: Salt the smashed cucumber and let it drain, or the dressing turns watery on the plate.
